Phenolics may be addressed with the No-Fenol enzyme, but sulfites are not degraded by these enzymes. Pineapple is probably phenolic. Gluten may be addressed by high-potency proteases such as AFP Peptizyde. So a little experimentation may be in order to see if the enzymes can be helpful.
